01 - Place the almonds and cashews in a food processor. Pulse until finely chopped but not a paste.
02 - Add the dates, chopped cherries, honey (or maple syrup), vanilla extract, and sea salt. Process until the mixture begins to stick together and forms a cohesive dough.
03 - Add dark chocolate chips and pulse a few more times to evenly distribute, leaving some texture.
04 - Scoop out tablespoon-sized portions and roll into balls using your hands.
05 - If desired, melt extra dark chocolate chips and drizzle over the bites. Sprinkle lightly with flaky sea salt.
06 - Place on a parchment-lined tray and refrigerate for at least 30 minutes to set. Store in an airtight container in the refrigerator for up to 1 week.
