# Directions:
01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - Place chicken breasts between plastic wrap and pound to 1/2-inch thickness. Season both sides with salt and pepper.
03 - Arrange three shallow bowls: one with flour; one with beaten eggs combined with Dijon mustard; one with crushed puffed rice mixed with panko, Parmesan, garlic powder, parsley, and smoked paprika.
04 - Dredge each chicken breast first in flour, tapping off excess, then dip into egg-Dijon mixture, and finally press firmly into crispy rice mixture, coating both sides evenly.
05 - Place coated chicken breasts on the baking sheet. Lightly drizzle with olive oil or spray with cooking spray.
06 - Bake for 18 to 22 minutes until golden and internal temperature reaches 165°F.
07 - While chicken bakes, whisk mayonnaise, Parmesan, Worcestershire sauce, lemon juice, anchovies (if using), garlic, and black pepper until smooth.
