- Sauce: 2 teaspoons olive oil, 4 large garlic cloves minced, 2 tablespoons all-purpose flour, 480 ml (2 cups) skim milk warmed, 60 g (1/4 cup) reduced-fat cream cheese cubed, 60 g (1/2 cup) freshly grated Parmesan cheese, 1/4 teaspoon ground black pepper, 1/2 teaspoon salt, Pinch of nutmeg (optional)
- Garnish: 1 tablespoon chopped fresh parsley, Extra freshly grated Parmesan for serving
Instructions

- Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al denté. Reserve 1/2 cup of pasta water then drain.
- Step 2:
- Meanwhile heat olive oil in a large nonstick skillet over medium heat. Add minced garlic and sauté until fragrant about 1 minute.
- Step 3:
- Sprinkle flour over the garlic and cook stirring constantly for 1 minute to form a roux.
- Step 4:
- Gradually whisk in the warmed skim milk ensuring no lumps form. Continue whisking until sauce thickens about 3 4 minutes.
