01 - Peel and freeze the banana in advance if not already frozen. Measure out all ingredients.
02 - Combine coconut milk, frozen banana, peanut butter, honey or maple syrup, lime juice, vanilla extract, and ice cubes in a blender.
03 - Blend on high speed until the mixture is smooth, creamy, and no visible chunks remain. Scrape down the blender sides if necessary.
04 - Taste and adjust the sweetness or lime juice if desired.
05 - Pour into two glasses and garnish with toasted coconut flakes and crushed peanuts, if using. Serve immediately while cold.
