20 - 1 pound fresh green beans, trimmed
21 - 1 tablespoon olive oil or unsalted butter

# Directions:

01 - Preheat oven to 375°F. Line a loaf pan or baking sheet with parchment paper.
02 - Combine breadcrumbs and milk in a large mixing bowl and allow to stand for 5 minutes. Add ground beef, eggs, finely chopped onion, minced garlic, ketchup, Worcestershire sauce, dried thyme, salt, and black pepper. Mix gently until just combined.
03 - Form the mixture into a loaf on the prepared baking sheet or press into the loaf pan.
04 - In a small bowl, mix ketchup, brown sugar, and mustard. Evenly spread the glaze over the surface of the formed loaf.
05 - Bake for 55 to 65 minutes until internal temperature reaches 160°F. Allow to rest 10 minutes prior to slicing.
06 - While meatloaf bakes, boil cubed potatoes in salted water for 15 to 20 minutes until fork-tender. Drain, then mash with whole milk, unsalted butter, salt, and black pepper until creamy.
