01 - Line an 8x8-inch baking pan with parchment paper to prevent sticking.
02 - In a large mixing bowl, combine rolled oats, almond butter, honey, melted butter, vanilla extract, and salt. Mix thoroughly until incorporated, then press the mixture evenly into the prepared pan. Refrigerate to set while preparing gummies.
03 - Pour the fruit juice into a small saucepan and sprinkle unflavored gelatin evenly over the surface. Allow to bloom for 5 minutes. Gently heat on low, stirring continuously until the gelatin fully dissolves. Incorporate honey or agave syrup and mix until smooth.
04 - Pour gelatin mixture into a parchment-lined small baking dish and refrigerate for 45 to 60 minutes until fully set.
05 - Once set, remove the gummies from the dish and cut into small cubes.
06 - Remove the refrigerated oat base. Distribute gummy cubes, freeze-dried fruit, and freeze-dried candy over the base. Press toppings gently into the surface to adhere.
07 - Return the pan to the refrigerator and chill for an additional 10 to 15 minutes to set completely.
08 - Lift the assembled snack out of the pan using parchment paper and cut into bars for serving.
